Evaporation eliminates the water contained in milk so that its chemical properties are not altered as much as possible.

It is a physical phenomenon in which a liquid that absorbs a certain amount of energy transforms into vapor. The transformation occurs at a constant temperature.

If milk evaporates at 100 °C it loses its nature to the point of becoming unfit for consumption, so the equipment works in a vacuum to achieve boiling at a temperature lower than that corresponding to normal atmospheric pressure;
For this purpose, vacuum pumps are used and the
condensation of the vapors from the last stage with cooling water.
